Why do NMN food lists disagree?
Newer analyses show that food measurements can differ substantially, which makes a fixed ranking unreliable. A 2025 open-access food-science study used a validated HPLC method and LC-MS/MS confirmation across plant foods purchased or collected in Brazil. It reported NMN concentrations from 40 to 13,000 micrograms per 100 grams of fresh weight and identified broccoli and green beans as relatively high among the samples tested.
That does not mean one paper “wins” and the other is wrong. The studies tested different samples, locations, plant materials, preparation conditions, and analytical workflows. The newer study also found that thermal treatment had varied effects across samples rather than supporting a single “cooking destroys NMN” rule.

Nutrition’s connection to NAD+ is broader than trace NMN in selected foods. NIH explains that niacin—vitamin B3—is used to form the coenzymes NAD and NADP. - Check the unit and food state. Milligrams and micrograms are not interchangeable; fresh, dry, raw, and cooked samples are not directly comparable.
- Look for a range. One precise number may hide variation.
- Separate precursor content from blood NAD+. Detection does not prove a measurable rise after eating.
- Do not borrow a supplement dose. A research protocol is not a food target or personal direction.
- Keep the whole food in view. Choose foods for broader nutrient value, preference, accessibility, and dietary fit.
